Create tasty treats at home

Did you know that January is also known as "Veganuary" Month? Veganuary is a month-long celebration that was created to encourage non-vegans to go vegan and experience the lifestyle for one month. To help you kick off Veganuary 2021, check out this recipe for Pea Guacamole from our partners at the redbird café in Homewood:

Pea Guacamole

No avocados? No problem. Want to keep things local like we do? This favorite recipe is a tasty blend of frozen peas and classic guacamole add-ins that result in an ultra light and creamy dip that can also double as a delicious sandwich spread and your friends and family will swear there are avocados in it!

Makes 2 cups. Ready in 35 minutes.

Ingredients:

  • 2 cups frozen peas, thawed
  • 1 teaspoon crushed garlic
  • ¼ cup fresh lime juice
  • ½ teaspoon ground cumin
  • 1 tomato, chopped
  • 4 green onions, chopped (white and green)
  • ½ cup chopped fresh cilantro
  • ½ teaspoon hot sauce
  • Sea salt

Instructions:

  1. Blend peas, garlic, lime juice, and cumin in a food processor or with immersion blender until smooth. You want the peas to all be blended smooth; you may find the immersion blender works best for you, or use a rubber spatula to mix and re-blend with the food processor.
  2. Transfer the mixture into a bowl and stir in the tomato, green onion, cilantro and hot sauce. Add salt to taste (remember your chips will have salt, too).
  3. Cover and refrigerate for 30 minutes to allow flavors to blend before enjoying.

Ring in 2021 with these delicious cocktail recipes from Siam Marina in Tinley Park:

Winter Wonderland

Ingredients:

  • 1.25 oz. Hpnotiq
  • 1 oz. Limoncello
  • .25 oz. lime juice
  • Champagne or prosecco

Instructions:

Rim your champagne glass with fine sugar to replicate ice/frost. Add the listed ingredients and top with champagne or prosecco.

Candy Cane Martini

Ingredients:

  • 1.5 oz. vanilla Stoli
  • 1.5 oz. Godiva White Chocolate liqeur
  • 1 oz. peppermint Schnapps

Instructions:

In your favorite martini glass, drizzle grenadine in the glass to look like candy cane stripes. Combine all the ingredients in a shaker, fill with ice and shake! Strain into your martini glass and garnish with a candy cane, or rim your glass with crushed candy cane.

However you plan to celebrate, we all wish you plenty of happy new year cheer, and here's to 2021 being amazing!
